It’s February, and we’re switching gears today to kick off my next batch of Six Ingredient Suppers6 Ingredient Soups!

I couldn’t be more excited about the recipes coming your way this month. At first, I wasn’t entirely sure you could make a delicious soup with just a few ingredients, but I have completely changed my tune!

With a great broth and a few secret weapon ingredients, the soup recipes this month are full of flavor and couldn’t be easier to make. This Smoked Sausage Minestrone is no exception!

Obviously, there are a ton of other vegetables, herbs and seasonings you could add to this Sausage Minestrone Soup.

The beautiful thing about Minestrone soup is that it’s made with whatever vegetables you have on hand. I’ve included a list of possible additions below, but just know that even if you add nothing extra, you will still have one awesome easy dinner with just the base recipe!

How to make this Smoked Sausage Minestrone Soup in the crockpot:

This soup recipe is easily converted to the slow cooker.

Just add your vegetables, broth, seasonings and sausage to the slow cooker and cook until the vegetables are tender.

At this point, you can add your beans if you like them very soft, but I prefer to add them with the pasta so they don’t turn to mush.

About 20 minutes before serving, stir in the pasta and let it cook just until the pasta is cooked to your desired firmness.

How to make Minestrone Soup in the Instant Pot:

Instant Pot Soups are some of my favorite, because of how quickly everything cooks, and it all comes together in one pot!

To turn this into an Instant Pot Minestrone Soup, add all of your ingredients (yes, ALL of them!) to the Instant Pot.

Put the lid on, turn the valve to sealing and cook on high pressure for 2 minutes.

Let the pressure release naturally for 5-10 minutes — this is optional, it’s just because soups can be very steamy with all of that liquid so letting it sit a while prevents some of that steam ending up all over your kitchen cabinets.

Variations on this Sausage Minestrone Soup:

  • Switch up the vegetables, or add in more. You can add almost any vegetables to this soup! If you are adding onions, mushrooms, cabbage or those that you prefer softened, add them at the beginning with the carrots and celery. If you’re adding broccoli or beans, I would add them closer to the end as they cook quickly.
  • You can swap out the vegetables for a frozen vegetable blend and save yourself even more prep time.
  • You can add in additional herbs and spices. Anything goes, but it’s a good idea to start with a couple you love, then taste and add in more if you want. Because I limited my ingredients here, I rely on the flavor of the broth, the sausage (which adds a ton!) and simple salt and pepper for seasoning. It has great flavor, but there’s lots of room for added herbs if you want to get crazy!
  • To make this soup extra special, stir in some heavy cream before serving. I do this for my kids and it helps to cool it before serving, too!

Ingredients

  • 1 tablespoon canola oil
  • 2 large carrots peeled and chopped
  • 2 ribs celery finely chopped
  • 4 cups low sodium chicken broth
  • 2 smoked sausages halved lengthwise and sliced (regular sized "smokies")
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can white kidney beans rinsed and drained, 540ml/19oz
  • 3/4 cup elbow macaroni pasta or another short cut of pasta

Instructions

  • Heat oil in a large dutch oven or soup pot over medium-high heat.

  • Add carrots and celery and cook until slightly softened, about 5 minutes.

  • Add broth, sausages, salt and pepper and simmer until carrots are nearly tender, about 10 minutes, stirring occasionally.

  • Add dry pasta and beans and simmer just until pasta is cooked, about 8-10 minutes. Serve.

    DELICIOUS!!! My teenage boy ate it and loved it! This is his first soup that he ate and loved. He tolerates others so I don’t make soup that often. But then this arrived at our dinner table and wow! It will be a special recipe for us to remember and enjoy for years to come.
